Oven Puff Pancakes

4 large eggs
lightly beaten
1 c. milk
1 c. flour
1/4 t. salt
1/3 c. butter, melted
1/4 c. sugar
sliced strawberries, blueberries, apples, or peaches
Powdered sugar

Place a well greased 12-inch iron skillet in a 425 degree oven for 5 minutes. Combine first 5 ingredients, stirring with a wire Wisk until blended. Remove skillet from the oven and pour batter into it. Bake at 425 for 20-25 minutes. It resembles a giant popover and will fall quickly after removing from the oven. Meanwhile, place fruit of choice and sugar in a small saucepan. Heat over low heat until broken down and warm. Pour onto puff pancake and cover with a sprinkling of powdered sugar.
